In Shanghai, I always liked the Yu Gardens. They're centrally located, but offer a retreat from the hustle and bustle, and there's lots of traditional Chinese achitecture to enjoy.

You can visit a site along the Great Wall as a day trip from Beijing (or some other northern cities). Each place is a bit different. Some are more touristy than others. Some look like they were only built 20 years ago due to complete restoration (such as the Badaling site) while others, like Simatai, look like they haven't been touched...some spots hold together, while at other places, it's crumbled away into the mountain ridge. Regardless, it's worth the trip.
